These seasoned air fryer diced potatoes are ready in 25 minutes and make a delicious sides. Making roasted cubed potatoes in air fryer is easy and with my recipe they come out fluffy on the inside, with a crispy outer. It is the perfect side dish for any occasion.

Easy – It is one of my easiest potato recipes. You simply dice the potatoes into cubes, season and air fryer. Easy peasy!
Quick– It cooks in under 30 minutes. One of the reasons why I prefer making seasoned diced potatoes in the air fryer rather than in the oven is that it is quicker and crispier in the air fryer.
Made with a few Ingredients- This potatoes recipe is made with a few ingredients. Potatoes, spices and herbs, and oil. That’s it! all under 10 ingredients.
Tasty- It is flavorful and delicious. I like eating it as appetizers or as a side dish to proteins like chicken and fish and salads.

Helpful Tips
- Use a sharp knife for cutting the potatoes.
- Cutting the potatoes into similar sized cubes will ensure they cook evenly.
- I like peeling my potatoes to make diced potatoes, but if you want to have the skin on them, wash them thoroughly before cutting, seasoning, and cooking.
- Shake the potatoes at least twice during the cooking period so all the sides brown and crisp evenly.
- Substituting the rosemary and parsley with Italian seasoning or mixed herbs is fine.
- It’s best to rest the potatoes for 5 minutes after cooking before serving them.

How To Make Diced Potatoes In Air Fryer
Prep the potatoes- Peel the skin off the potatoes. Using a sharp knife, cut the potatoes into cubes of 1-11/2 inch sizes.
Rinse the potatoes, drain in a colander and pat them dry with paper towels to get out as much moisture as possible.
Season diced potatoes
Transfer the potatoes into a bowl, and add paprika, rosemary, parsley, thyme, garlic, onion granules, black pepper, salt and olive oil. Mix till the potatoes are evenly coated in the seasoning.

Air Fry Potatoes
Pour the seasoned cubed potatoes into the air fryer and spread them out. Air fry potatoes at 190C/380F for 25 minutes. Shake the potatoes halfway through cooking.

Serve – Serve as snacks or with main dish like chicken, salads, steak or seafood.

Storing and Reheating
Where you have leftover potatoes, store them in a sealable container (this is after they are cooled), and store them in the fridge for up to 5 days. When ready to consume them, reheat in the air fryer at 180C/380F for 8 minutes till they are back crispy and heated through.

It takes 25 minutes to cook diced potatoes in the air fryer at 400F. It takes longer to cook if it is done at a lower temperature.
No, not for this recipe but some recipes might call for parboiling the potatoes before air frying.
