My garlic butter potatoes and onions recipe is an easy potato recipe that is delicious and irresistible. Crispy oven baked potatoes and onions are tossed in garlic butter sauce for a side dish that is perfect for any occasion.

This potato side dish is one of my family favorites and always gone in a jiffy when I make it. My children and husband can’t get enough and always ask for more. I like serving it with steak or chicken for a quick dinner.

Potatoes- Yukon gold, Maris piper, Baking potatoes are some good ones.

Onions- Use yellow or brown onion

Rosemary- This herb is perfect on baked potatoes.

Garlic granules

Onion granules

Black pepper

Paprika- I like the hint of smokiness from this and also the colour it gives the dish.

Salt

Olive oil

How To Make Garlic Butter Baked Potatoes and Onions

Step 1- Peel the potatoes and cut them into bite-size of half an inch to 1 inch. Rinse the potatoes, pat dry, and transfer to a bowl.

Step 2- Peel the onion, and cut it into sizes similar to the potato cubes. Add the onions to the potatoes.

Step 3- Add rosemary, garlic granules, onion granules, black pepper, salt and olive oil. Mix till they are combined.

Step 4- Transfer the seasoned potatoes and onions to a baking tray and bake in the oven at 200C/400F for 35-40 minutes or until crispy and golden. Stir halfway during the cooking time so they crisp evenly.

Step 5- While the potatoes are cooking, make the garlic butter sauce by adding butter, garlic, black pepper, and parsley into a bowl. Microwave for 1-2 minutes until the butter is melted or transfer to a pan and simmer on low heat till the butter is melted. Set aside.

Step 6- Bring out the baked potatoes and onions. Let it rest for 3 minutes before pouring the garlic butter sauce over it. Stir till well combined.

Helpful Tips

  • You don’t have to peel the potatoes if you like the skin on. If you don’t peel, wash the potatoes properly and pat them dry.
  • Don’t overfill the baking tray. It’s best to have them in a single layer on the tray.
  • To add lemon flavor, drizzle some lemon juice on the potatoes after bringing them out of the oven.

Storing and Reheating

I rarely ever have leftovers of this as it’s so delicious but if you have leftovers or make them ahead, pack them into an airtight container or a Ziploc and put them in the fridge for up to 3 days or store them in the freezer for up to 6 months.
Reheat- Spread them in a baking tray and bake at 180C/360F for 8 minutes or till warmed.
